These are by far the best cookies I've baked in a long time. The apples keep the cookies moist and chewy while the white chocolate is a perfect compliment to the oatmeal. I think even Granny Smith herself would approve!
CHEWY OATMEAL APPLE AND WHITE CHOCOLATE COOKIES {PRINT THIS RECIPE}
1 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
3 cups quick cooking oats
1 Granny Smith apple, peeled, cored and diced
6 ounces white chocolate chips
-Preheat oven to 350 degrees
-In a large bowl, cream the butter and sugars until light and fluffy.
-Beat in the eggs and vanilla.
-In another large bowl, blend the flour, cinnamon, baking soda and salt.
-Gradually add the dry ingredients into the creamed butter mixture and stir to combine.
-Add the apples and chocolate chips. Stir well.
-Drop by rounded tablespoons on parchment lined baking sheets.
-Bake for 18-22 minutes, rotating the cookie sheets half way during the baking process.
-Remove from oven, cool slightly and remove the cookies to a wire rack to cool completely.
These cookies are the perfect compliment for fall! Why not bake some today?
